Pay close attention to the following: 

• The grip on the waist to control the hips
• The way he places his knee on their torso instead of on the floor, creating discomfort 
• The use of the crossface / prybar combo to prevent his opponents from getting onto their side 
• The head under the chin to stretch them out 
• The way he switches his grip to set up the choke mid-pass
